Cherry Chocolate Toffee Cookies

Ingredients

  • 1-1/2 cups Flour
  • 1 tsp Soda
  • 2 sticks Butter, room temperature
  • 3/4 cup Light Brown Sugar
  • 3/4 cup Sugar
  • 1 Egg, large
  • 2 tbsp Vanilla
  • 1-1/2 cups Oats
  • 1 cup Dried Cherries, preferably tart cherries
  • 1 pkg Bittersweet Chocolate Chips
  • 1 cup Toffee, I use the Heath Toffee Pieces

Preparation

Step 1

Heat oven to 350 degrees. Line baking sheets with parchment paper.

In a large bowl, cream the butter and sugars on medium until light and fluffy. Add the egg and mix on high speed until combined. Add the vanilla and mix until combined. Scrape down the bowl with a spatula.

Add the flour and baking soda to the liquid mixture and mix on low speed until combined. Add the oats, cherries, chocolate chips and toffee pieces. Mix between each addition.

Scoop dough with a cookie scoop or a heaping tablespoon and place on the baking sheet about 2 inches apart.

Bake until golden brown about 14-16 minutes. Transfer to a wire rack to cool.
