Ingredients
- Cream Cheese Frosting:
- 1 Box Yellow Cake Mix
- 1 Pkg. (4-serving size) Vanilla Instant Pudding Mix
- 3 Cups Grated Carrots
- 1 Can (8 oz.) Crushed Pineapple, undrained
- 4 Eggs
- 1/2 Cup Chopped Walnuts
- 1/2 Cup Water
- 2 tsp. Cinnamon
- 2 (8 oz.) Pkg. Cream Cheese, softened
- 1/2 Cup Butter, softened
- 2 tsp. Vanilla
- 2 Cups Powdered Sugar

Step 1
Preheat oven to 350 degrees. Spray 13" x 9" baking pan with nonstick cooking spray. Combine cake mix, pudding mix, carrots, pineapple, eggs, walnuts, water and cinnamon in large bowl; beat 1-2 minutes or until well blended. Spread batter in prepared pan. Bake 40-45 minutes or until a toothpick inserted into the center come out clean. Cool completely on wire rack. Prepare cream cheese frosting, if desired and spread over cooled cake. Cream Cheese Frosting: Combine softened cream cheese, softened butter, and 2 tsp. vanilla in large bowl; beat with electric mixer 3 minutes or until fluffy. Gradually add 2 cups powdered sugar; beat until well blended.
