Gingerbread Cupcakes
From Wilton. Would be cute decorated as a gingerbread boy or girl.

Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 2 eggs
- 3/4 cup milk
- 1 teaspoon pure vanilla extract
- 1/3 cup melted butter
Preparation
Step 1
Preheat oven to 325 degrees. Line muffin pans with baking cups.
In large bowl, combine flour, sugar, baking powder, cinnamon, ginger, cloves and salt. In separate bowl mix eggs with milk and vanilla; stir in melted butter. Add all at once to flour mixture; stir just until moistened.
Fill prepared pans. Bake 15-18 minutes or until cupcake springs back when lightly touched.
Cool in pan on rack for 5-8 minutes. Remove from pan and cool completely.
