Ingredients

  • 1 TB olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans unsalted chicken broth (28oz)
  • 1 can (12 oz) 2% evaporated milk
  • 1/2 box uncooked multigrain bow-tie pasta
  • 1/2 box vegetable bow-tie pasta
  • 10 oz. ham cubes (or 1/2 lb turkey or regular bacon, cooked)
  • 2 oz. Parmesan Cheese, grated
  • 4 oz reduced-fat cream cheese, softened
  • 1 bag (12 oz) frozen peas, thawed
  • 1/2 tsp crushed red pepper flakes

Preparation

Step 1

Add oil to large skillet and heat on medium high setting. Saute onion and garlic about 2 minutes. Add chicken broth, evaporated milk, and pasta. Cover and simmer about 14-16 minutes, stirring occasionally.
Remove from heat and stir in grated Parmesan cheese, cream cheese, peas and red pepper flakes. Cover and let sit for 5 minutes until thick and creamy.
