Greg's Roasted Vegetables Marinade

Good with zucchini, yellow squash, carrots, cherry tomatoes, red onion, red/yellow/orange sweet peppers

Ingredients

  • 1/2 Cup Olive Oil
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • 2 Bay Leaves, crushed
  • 1 tsp Dried Oregano
  • 2 Cloves Garlic, minced
  • 2 TBSP Fresh Lemon Juice
  • 1 tsp Grated Lemon Zest
  • Salt & Pepper to taste

Preparation

Step 1

Preheat oven to 400

Bake vegetables uncovered for 20 minutes or until tomatoes split

Reduce heat to 200, stir vegetables for 20 more minutes.

Turn every 20 minutes until done.
