Ingredients
- Slaw Mix:
- 1 1/2 Cauliflower, cut into bite size pieces
- Olive Oil
- 1 Recipe of Taco Seasonong (My Cookbook)
- 1/2 Cabbage, sliced thinly
- 1/2 Red Cabbage, sliced thinly
- 12-14 Corn Tortillas
- 1/4 c Mayonnaise
- 6 Tbsp Sour Cream
- 4 1/2 Tbsp Vinegar
- 1 1/2 Tbsp Sugar
- 4 tsp Minced Onions
- 3/4 tsp Celery Salt
- 4 1/2 tsp Mustard Powder
- 3/4 tsp Salt
- 3/8 tsp Black Pepper
- 2-3 Lime, squeezed
- Finishing Touches:
- 2 Large Avocado, sliced
- Cilantro for garnish
- Lime juice
Preparation
Step 1
In a large bowl, mix all slaw ingredients together. Set aside about 1 cup, cover and refrigerate.
Add both cabbages to remaining mixture, combine, cover and refrigerate.
Preheat oven to 375 degrees.
Cut cauliflower into bite sized pieces.
Drizzle olive oil over cauliflower and mix to coat.
Add taco seasoning and mix to coat.
Layer baking dish with cauliflower and bake for 20 minutes.
Prepare taco shells.
Layer tacos to your liking.
