Ingredients
- 1/2 Avocado
- 1/3 cup red wine vinegar
- 1/4 cup oil
- 1/2 tsp. salt
- 1/2 tsp. dried oregano
- 1/4 tsp black pepper
- 10 oz. mixed greens
- 3 sliced avocados
- 3 cups roasted carrot strips
- 3/4 cup sliced green onions
- 1 1/2 cups queso fresco
