Tofu with Mushrooms and Snow Peas

Ingredients
- 3 TB soy sauce
- 1 Tsp sesame oil
- 1 TB rice wine vinegar
- 1 pkg extra firm tofu
- mushrooms (shitake?) quartered
- 4 minced garlic cloves
- 1 tsp grated fresh ginger
- 1 TB honey
- snowpeas
- scallions
Preparation
Step 1
Combine soy sauce, sesame oil, rice wine vinegar in dish/pan. Rinse, dry and cut tofu into 1/2 " cubes and immerse in the marinade for 30 minutes. Marinate turning once to saturate all sides. Remove tofu, reserving marinade.
Heat 2 TB vege oil in skillet and fry, turning to brown on all sides. Remove from pan and saute mushrooms. Saute snow peas, garlic , ginger. Add tofu and reserved marinade and heat until liqauid thickens. Serve sprinkled with chopped scallions.
