Ingredients

  • 4 eggs
  • 1 bag spinach
  • 1/4 cup crema
  • 1/2 cup jack and mozzarella cheeses
  • 1/2 onion
  • 1 tsp Knorr Suiza
  • 1 Mexican bolillo

Preparation

Step 1

Preheat oven to 350
Soak bolillo in milk while you prepare the other ingredients
Finely chop onion and sautee for a few minutes.
Add the spinach to the onion until fully cooked
Squeeze out as much milk from the bolillo as possible
Put Spinach, onion, bolillo, crema, cheeses, suiza, and eggs into food processor until mixed evenly.
Pour into pan and sprinkles about 1/4 cup more cheese on top.
Put in oven for 30-35 minutes until cheese on top is golden.
