  • Cinnamon Whipped Cream:
  • 1/3 Cup Butter, softened
  • 2/3 Cup Unsweetened Apple Juice Concentrate, frozen, thawed
  • 1/2 Cup Unsweetened Applesauce
  • 2 Eggs
  • 2 Cups Flour
  • 2 tsp. Baking Powder
  • 2 tsp. Cinnamon
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 Large Apple, peeled and chopped
  • 1/2 Cup Whipping Cream
  • 1 tsp. Vanilla
  • 1/4 tsp. Cinnamon

Step 1

Preheat oven to 375 degrees. Spray 8" or 9" square baking pan with nonstick cooking spray. Beat butter in large bowl with electric mixer until creamy. Beat in apple juice concentrate, applesauce, and eggs until well blended. Add flour, baking powder, cinnamon, baking soda and salt; beat until well blended. Stir in apple. Spread batter in prepared pan. Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Serve warm or at room temperature with cinnamon whipped cream, if desired. Cinnamon Whipped Topping: Beat 1/2 cup whipping cream in medium bowl with electric mixer at high speed until soft peaks form. Add 1 tsp. vanilla and 1/4 tsp. ground cinnamon; beat until stiff peaks form.
