Greek-Style Kale Salad

Ingredients

  • 1 T lemon juice
  • 1 T olive oil
  • 1/2 t sugar
  • 1/2 t pepper
  • 4 c torn kale leaves
  • 2 c torn Swiss chard
  • 1 c chopped cucumber
  • 1 oz crumbled feta cheese
  • 1/4 c sliced green onions
  • 10 kalamata olives, pitted and quartered

Preparation

Step 1

Combine first four ingredients in a bowl, stirring until sugar dissolves. Add kale and Swiss chard; toss. Let stand 10 mins. Add remaining ingredients, toss and serve.
