  • 1 loaf firm sandwich bread, Peperidge farm preferred
  • 1 cup mayonnaise
  • 1/2 cup freshly grated Parmesan
  • yellow mustard, for spreading on bread rounds
  • small white onions, sliced very thin

Preheat broiler to 425@

With a 2 1/8" cookie cutter, cut 2 rounds out of each slice of bread. Arrange the rounds on a baking sheet and place 5" from the heat source. Toast bread until the are golden brown on one side. 3-5 in.

Using a whisk, mix together mayo and Parmesan in a small bowl. Turn bread over and spread each round with a thin layer of mustard. Put 1 onion slice on top and cover with about 1 heaping teaspoon of mayo mixture, spreading mixture across the onion and bread.

Broil until golden about 1 minute, Watch closely, each oven varies. Work in batches of 24 rounds. Serve one batch while hot while the next is cooking.
