Pickled Beets

Ingredients

  • 20 pounds beets
  • 7 cups water
  • 7 cups vinegar
  • 7 cups sugar
  • 4 teaspoons salt
  • 4 tablespoons pickling spice

Preparation

Step 1

Cook beets until tender, approx. 1 hour. Drain, cover with cold water and slip skins off. Cut into chunks and put into canning jars.

Place pickling spice in a spice bag. Make syrup and boil 5 minutes with spice bag.

Remove spice bag and pour over beets. Seal and process.
