All Purpose Baking Mix

- 9 c flour
- 1/4 c sugar
- 1 c vegetable shortening

Preparation
Step 1
Pulse in a large food processor. Store in an airtight container for several months.
Can be used for Pancakes, Biscuits, Scones, Muffins, Coffeecake.

Pancake
2 c baking mix
1 egg
1-1/4 c Milk
Blend for about 20 seconds. Cook as normal.
Biscuits
2 c baking mix
1/2 c milk
Mix with a fork, blend until the two come together. Turn dough out onto a lightly floured surface gently knead about 10 times. Flattened to about 1/2 to 3/4 thick.
After biscuits are shaped bake them for about 15 minutes.
Sweet Scones
2 c baking mix
Add your favorite spice, alone or combination, 1 tsp per cup or mix
1/4 c fruit per cup of mix
1/2 tsp grated zest per cup of mix
1/4 c milk per cup of mix
Bake 450' for 15 minutes.
Muffins
2 c baking mix
1/3 c sugar
1 egg
1 c milk
Add like scones.
Bake 450'. Grease muffin tin. Bake 15 minutes
Coffeecake
3 c baking mix
1/2 c sugar
1 1/3 c milk
2 eggs
Preheat 350'. Grease bottom and sides of a bundt pan. Put 1/2 batter in the bottom. Sprinkle 1/3 of the topping over and swirtl gently with a fork. Put remaining batter on top and sprinkle on another 1/3 of the topping.
Bake 25-30 minutes until cake tester comes out clean. Cool for ten minutes then turn out onto a platter, sprinkle the remaining topping and serve.
