Ingredients
- 2 large heads Boston lettuce rinsed, dried, and tough outer leaves discarded
- 2 large shallots peeled, diced fine
- 3/4 cup small whole flat-leaf parsley leaves
- Coarse salt to taste
- Freshly-ground black pepper to taste
- 1/4 cup Shallot Vinaigrette (see recipe)

Preparation
Step 1
Place the lettuce leaves in a large salad bowl. Toss with the shallots and the parsley. Season with salt and pepper. Lightly toss with the Shallot Vinaigrette. Serve from the bowl or divide among 8 salad plates.
