  • 2 large heads Boston lettuce rinsed, dried, and tough outer leaves discarded
  • 2 large shallots peeled, diced fine
  • 3/4 cup small whole flat-leaf parsley leaves
  • Coarse salt to taste
  • Freshly-ground black pepper to taste
  • 1/4 cup Shallot Vinaigrette (see recipe)

Step 1

Place the lettuce leaves in a large salad bowl. Toss with the shallots and the parsley. Season with salt and pepper. Lightly toss with the Shallot Vinaigrette. Serve from the bowl or divide among 8 salad plates.
