Sweet & Sour Chicken in a Skillet

Ingredients

  • 1 Tbs. Vegetable Oil
  • 1 lb. Chicken Breasts, cubed
  • 1 Cup Sliced Onion
  • 1 Bag Frozen Mixed Vegetables (such as broccoli, peppers & carrots)
  • 1/2 Cup Catalina Salad Dressing
  • 1/2 Cup Brown Sugar
  • 1 Tbs. Cornstarch
  • 1/4 Cup Soy Sauce
  • 1 Can Pineapple Chunks with liquid
  • Cooked Rice

Preparation

Step 1

Heat a large skillet over medium high heat. Add the vegetable oil and the chicken. Cook until chicken is browned and add the onion and frozen vegetables. Stir. Combine the dressing, sugar, cornstarch, and soy sauce in a small bowl. Add it to the skillet along with the pineapple. Stir and cook for 1 minute until sauce is thickened. Serve with the rice.
