  • 1 c graham cracker crumbs
  • 2 Tbsp. sugar
  • 2 Tbsp. melted butter
  • 4 8 oz. packages cream cheese softened
  • 1 1/2 c plus 2 Tbsp. sugar
  • 4 eggs
  • 1 teas. vanilla
  • pinch of salt

Step 1

Mix graham cracker crumbs, 2 Tbsp. sugar and melted butter until all moistened. Press into a spring form pan lined with parchment paper.
Bake at 350 degrees for 10-12 minutes. Let cool.

In a large mixing bowl, combine the cream cheese, and the 1 1/2 cups plus 2 Tbsp. sugar, mix until well combined. Add eggs one at a time, add vanilla and pinch of salt mixing well.

Wrap the spring form pan with foil and place in a large roasting pan with high sides. Pour boiling water about half way up the side of the pan. Bake at 325 degrees for 70-75 min. Let cool completely and then place in refrigerator uncovered for 24 hrs. Remove from pan and serve.
