Southwest Chicken Chili - Wendy Hashek
- Southwest Spice Blend:
- 1 box (32oz) of chicken broth
- 1/2 cup chopped onion
- 1 can (4oz) chopped green chilis
- 2 cans Great Northern Beans
- 1-1/2 lb. cooked chicken breast, baked, broiled or grilled
- 1 Tablespoon garlic powder
- 1 Tablespoon ground cumin
- 2 tsp. oregano leaves
- 2 tsp. cilantro leaves
- ground pepper
Stir broth, green chilis and Spice blend. Simmer 15 min.
Stir in beans and chicken. Simmer 5 min.
Optional Additions and toppings: noodles,Monetery Jack cheese, green onion, crushed tortilla chips.
makes about 8 cups.
