Ingredients
- 1 garlic bulb
- 1 cup finely chopped crimini mushrooms
- 8 oz. cream cheese 1 1/4 cups Freshly grated Parmesan cheese
- 1 cup freshly grated smoked Gouda cheese
- 1/2 cup craft beer
- Green on ion chopped (optional)
- 1/4 bag Tostitos Cantina Extra thin tortilla chips

Directions
Preheat oven to 350°F.
Roast garlic and cool. Sauté chopped mushrooms until most of the moisture has evaporated, approximately 3 to 5 minutes. In a food processor, mix 1 cup Parmesan, cream, Gouda, beer, mushrooms, cornstarch and garlic until combined.
Pour mixture into baking dish. Sprinkle with remaining 1/4 cup of Parmesan.
Bake until top crisps and turns golden brown, about 15 minutes. Garnish with chopped green onions and serve with Tostitos Cantina Chips
