Ingredients
- Lime juice, from 1/2 lime
- 1 tsp grated ginger
- 1 lb boneless skinless chicken breasts, cut into strips
- 1/8 cup chopped cilantro
- 1 Tbsp curry powder
- 1/2 habanero pepper, seed removed
- 1 clove garlic
- 1 Tbsp coconut oil
- Salt and Pepper to taste
- Rice noodles, for serving
- Cilantro for garnish
Preparation
Step 1
Combine lime juice and ginger, add chicken strips and marinade for 2 to 24 hours. In a food processor, puree cilantro, curry powder, habanero pepper, garlic and coconut oil. Add salt and pepper to taste.
Saute chicken until browned on both sides. Then add the pureed mixture, and simmer for 20 minutes or until chicken is cooked through. Serve with rice noodles and garnish with cilantro.
