Sally's Chicken and Yellow Rice

Ingredients

  • 1 whole skinless stewing chicken cut up in quarters( I use bonless, skinless thighs)
  • 1 whole onion chopped
  • 2 cloves of garlic (crushed)
  • 2 bayleaves
  • 1 envelope Vigo flavoring
  • 1/2 cup chopped olives
  • 1 oz. olive oil
  • 4 oz. canned peas
  • 2 tabl. salt
  • 1 reg. can stewed tomatoes
  • 1 whole chopped green pepper
  • 1 lb. long grain rice ( 1 bag)
  • 1 quart of water ( 4 cups)
  • 6 strips of bacon ( 1 per person)

Preparation

Step 1

Boil chicken until done, set aside. In a large saucepan ( this pan you use to cook everything), cut up bacon pieces and fry. To that add onion, garlic, green pepper, saute with oil over med. heat, using the bacon grease also. Add tomaotes and olives. Add water, Vigo, bayleaves, and salt. Stir well, add chicken, bring to a boil, reduce heat and simmer with lid on 10 minutes. Bring to a boil again, add rice until boils again. Stir rice once, cover tightly. Lower heat to simmer 25-30 minutes. When done garnish with peas and pemintos.
