Quinoa, zucchini and carrot souffle

  • Topping:
  • 2 carrots
  • 2 medium size zucchini
  • 5 eggs
  • 1 cup cooked quinoa
  • pre-made cucumber sauce, or plain yogurt with cucumber
  • OR sour cream



Step 1

Preheat oven to 350
Grate carrots and zucchini.
Add the cooked quinoa and eggs to carrots and zucchini.
Put in greased pan and cook 30 minutes.
Serve with sauce.
