Blueberry Vanilla Cake
- 2 Pkg. (12 oz. each) Frozen Blueberries, thawed, drained or 5 Cups Fresh
- 6 Tbs. Sugar, divided
- 3/4 tsp. Cinnamon, divided
- 1 Vanilla Cake Mix
- 3/4 Cup Butter (1 1/2 sticks), cut into thin slices
Preheat oven to 350 degrees. Spray 2 9" pie plates with nonstick cooking spray. Spread one package of blueberries in each prepared pie plate. Sprinkle each with 2 Tablespoons sugar and 1/4 teaspoon cinnamon. Top with cake mix, spreading evenly. Top with butter in single layer, covering cake mix as much as possible. Sprinkle with remaining 2 Tablespoons sugar and 1/4 teaspoon cinnamon. Bake 50-55 minutes or until toothpick inserted in the middle comes out clean. Cool at least 15 minutes before serving. Note: You could also use a 9" x 13" baking pan instead of the 2 9" pie plates.
