Asparagus with Sesame-Ginger Dressing

Ingredients

  • 1 1/2 lb asparagus, trimmed
  • 3 tbsp sesame oil
  • 2 tbsp each: soy sauce, lime juice
  • 1 tbsp honey
  • 1 clove garlic, minced or pressed
  • 1/2 tsp pureed ginger
  • Kosher salt to taste
  • 1 green onion (white + light green parts), finely chopped

Preparation

Step 1

Remove steamer basket from tall, deep asparagus pot. Add asparagus to basket, tips facing up. Add water to pot, 2 to 3 inches deep. Bring to boil on high heat. Add basket with asparagus. Cover. Turn heat to medium. Cook until asparagus is tender but firm, about 3 minutes for medium stalks. Remove basket. Rinse with cold water to stop cooking. Drain well.

In medium bowl, whisk together sesame oil, soy sauce, lime juice, honey, garlic and ginger. (Makes about 1/2 cup.)

To serve, pat asparagus dry. Arrange on platter with tips in alternating directions. Drizzle with dressing. Sprinkle with salt. Sprinkle with green onions.
