Southwest Prime Rib
- 1 prime rib roast
- 1 cup stone-ground mustard - (8 oz jar)
- 1/4 cup balsamic vinegar
- 3 tablespoons course-ground black pepper
- 1 tablespoon salt
Mix together mustard, vinegar, salt, and pepper and rub onto meat, coating meat thickly. Roast at 350 degrees for 15 minutes per pound (or a reading of 130 degrees on a meat thermometer). Let rest for 15 minutes, then carve and enjoy!
