Ingredients

  • 1 leftover roast chicken carcass, meat picked off (reserve for the stew)
  • 1/2 teaspoon kosher salt
  • 8 black peppercorns
  • 2 stalks celery, cut into chunks
  • 1 bay leaf
  • 1 carrot, cut into chunks
  • 1 onion, cut into chunks

Step 1

This is an "updated" approach to making chicken stock since it begins with an already roasted chicken (not a fresh uncooked one).

When stock is ready, you can make rice soup, noodle soup, or use the stock in any recipe where it is needed.
