Pistachio & Mint Pesto

This is a fun twist on pesto. I eat it on chicken sandwiches, but this pesto would be just as tasty with roasted tomatoes on toast, on a poached egg or just straight off the spatula. Don’t judge. We’ve all been there.

Ingredients

  • 1/2 cup pistachio nuts
  • 1/2 cup mint leaves
  • 2 cloves garlic, crushed
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup extra virgin olive oil

Preparation

Step 1

Blend pistachios, mint, garlic, Parmesan cheese and olive oil until finely chopped
