Ingredients

  • 1 large potato, scrubbed and dried
  • softened butter
  • salt
  • 12 med shrim shells, tails off, deveined
  • 1 1/2 oz cream cheese, softened
  • 2 T hot milk
  • 2 tsp butter (melted in milk)
  • 1 T minced green onion
  • 1 T minced parsley
  • s&P to taste
  • 2 T butter
  • 1 minced garlic clove
  • 1/4 cup grated cheddar cheese
  • 2 black olives

Preparation

Step 1

Preheat oven to 350

Smear potato with softened buttter.
Salt it and bake 1-1/4 hours until done.'
Meantime, clean shrimp and set aside.
Grate the cheddar cheese.
When potato is done, cool to handle.
Cut in 1/2 lenghwise and carefully remove cooked potato
to bowl, reserving skin whole.
Mash potato with cream cheese, milk and butter, onion
and parsley, s&P to taste.
Melt 2 T butter with garlic and drench the raw shrimp in it.
Hang shrimp over potato skin - fill skin with potato mix - sprinkle over grated cheese and bake 15 minutes more.
Remove from oven, add olives slices for eyes and serve.
