Nut Bread

Can be varied with different kinds of fruit. Really good with chopped cranberries for the holidays.

Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 beaten egg
  • 1 2/3 cups milk
  • 1/4 cup cooking oil
  • 3/4 cup chopped nuts (optional)
  • 1 cup coarsely chopped cranberries (optional)

Preparation

Step 1

In a mixing bowl, stir together flour, sugar, baking powder, salt and baking soda. In another mixing bowl combine beaten egg, milk, and cooking oil. Add to flour mixture, stirring just till combined. Stir nuts into batter.

Pour nut-bread batter into greased and sugared bundt plan. Bake in a 350 degree oven for 1 hour or so until a toothpick inserted near the center comes out clean. (40 to 45 minutes for mini loaf pans.)

Cool in pan or pans for 10 minutes. Remove; cool thoroughly.
