Ingredients
- 10 pounds shoulder roast (clog)
- 2 tablespoons paprika
- 1/8 cup garlic powder
- 1/4 cup monosodium glutamate
- 3 tablespoons salt
- 2 tablespoons dry mustard
- 1/4 cup onion powder
- 1/2 tablespoon oregano
- 1 1/4 tablespoons freshly-ground black pepper

Step 1
Mix all ingredients together except the meat. Then rub into the meat. Line a cookie sheet with foil, folding up edges. Bake at 175 degrees. (Medium: 18 hours or Done: 19 hours) Let set for one hour before slicing.
