BLT Breakfast Sandwiches

Ingredients

  • 4 ciabatta rolls, cut in half
  • 4 eggs
  • 1 1/2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 cup mayonnaise
  • 1 cup of lettuce leaves
  • 1 large tomato, thinly sliced
  • 8 pieces of cooked bacon

Preparation

Step 1

Whisk the eggs, milk and salt together in a bowl. Heat an 8-inch skillet over medium heat. Pour 1/4 of the egg mixture into skillet, swirling to coat. Cook for 2 minutes, then flip the egg "pancake" and cook for an additional 1 minute. Set finished egg aside, and repeat three more times so you have four egg "pancakes."

Fold each egg in half, then begin to build sandwiches. Layer lettuce, tomato, bacon and folded egg onto bottom half of sandwich. Spread 1 tablespoon of mayonnaise (or to preference) onto top piece of bread and stack onto filling to complete the sandwich.

Tip: Any type of sturdy roll or thick bread would also work well for this sandwich
