Turkey and Stuffing Meatloaf

Ingredients
- 2 red apples, peeled and diced (McIntosh or Gala would work well)
- 1 tablespoon lemon juice
- 2 pounds lean ground turkey
- 3/4 cup finely chopped celery
- 3/4 cup finely chopped onion
- 1 tablespoon poultry seasoning
- 1 large egg
- Salt and freshly ground black pepper, to taste
- 2 cups low sodium chicken broth
- 2 cups stuffing mix
- 1 tablespoon olive oil
Preparation
Step 1
Preheat oven to 400 degrees. In a large bowl, toss together apples and lemon juice. Add turkey, celery, onion, poultry seasoning, egg, salt and freshly ground black pepper. In a medium bowl, combine broth and stuffing mix; lightly toss till well blended; add to the large bowl; blend all ingredients well. Turn mixture out onto a parchment paper-lined baking sheet and shape it into a loaf. Bake for about 1 hour or until browned and cooked through.
SERVING SUGGESTION: Baked russet potatoes and steamed baby Brussels sprouts tossed with butter and a dash of nutmeg.
VEGETARIAN: Use TVP crumbles.
KOSHER: No changes necessary.
