Ingredients
- 3 cups shredded zucchini
- 2 cups brown sugar
- 3 eggs
- 1/2 cup oil
- 2 tea. vanilla
- 1/3 cup molasses
- 4 1/2 cups flour
- 1 tea. salt
- 1 tea. baking powder
- 1 tea. baking soda
- 1 tea. nutmeg
- 1 cup raisins
Preparation
Step 1
Beat eggs; add brown sugar and zucchini. Stir in oil, vanilla and molasses. Sift together flour, salt, baking powder, baking soda, and nutmeg. Add this to the zucchini, then fold in raisins.
Grease and flour 2 loaf pans. Fill 2/3 full.
Bake at 325 degrees for 1 hour and 15 minutes.
Cool 10 minutes and remoe from pans.
