Ingredients
- 1 tablespoon olive oil
- 1 1/2 pounds 95% lean ground beef
- 1 large onion, finely chopped
- 1 medium red bell pepper, seeded, deribbed and finely chopped
- 3 cloves garlic, pressed
- 1 chipotle pepper in adobo, chopped, plus 1 tablespoon of the sauce
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 1 cup tomato sauce
- Salt and pepper, to taste
- 6 Kaiser rolls, split

COOKING INSTRUCTIONS:
Heat the oil in a large skillet over medium-high heat; add ground beef and cook for 4 to 5 minutes, breaking it up as it browns. Add onion, bell pepper, garlic, chipotle pepper and sauce; cook, stirring occasionally, for 3 to 4 minutes or until onion and bell pepper start to get a little tender. In a small mixing bowl, combine brown sugar, Worcestershire sauce and tomato sauce; add to the skillet; salt and pepper to taste. Bring to a bubble and simmer until nice and thick, 3 to 4 minutes. To serve, divide the mixture between the split Kaiser rolls.
SERVING SUGGESTION: Corn on the cob and a relish tray of baby carrots, celery sticks and cherry tomatoes.
VEGETARIAN: Use TVP crumbles and use vegetarian Worcestershire sauce.
