Ingredients
- 1 1/2 pounds skinless chicken thighs
- 1 (14.5-oz.) low sodium canned Italian-style diced tomatoes
- 1 (6-ounce) no salt added tomato paste
- 1/2 cup chopped onion
- 1 tablespoon minced garlic
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Preparation
Step 1
Place chicken in a slow cooker. In a medium bowl, combine tomatoes and remaining ingredients; blend well; pour over chicken. Cover and cook on HIGH for 1 hour. Reduce heat setting to LOW and cook for 4 to 5 hours or until chicken is fork-tender.
SERVING SUGGESTION: Angel Hair pasta and a big salad tossed with Easy Balsamic Vinaigrette (see recipe).
