Ingredients
- 4 golden apples, cored and chopped
- 1 cup apple cider
- 3 tablespoons brown sugar
- 1 ounce golden raisins
- 1 teaspoon cinnamon
- 4 (4-oz.) boneless loin pork chops
- Black pepper, to taste
- Water/oil mixture
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
Preparation
Step 1
In a medium saucepan, cook apples, cider, brown sugar, raisins and cinnamon over medium-high heat until tender, about 15 minutes; set aside. Season pork chops with pepper. Heat water/oil mixture in a large skillet over medium-high heat; add pork chops and cook until browned, 6 to 7 minutes per side. Stir in maple syrup and mustard and cook for 1 minute, turning pork chops to coat. To serve, top chops with reserved apple-raisin sauce.
SERVING SUGGESTION: Baked sweet potatoes and steamed green beans.
