Zucchini Pineapple Bread

  • 1 cup packed brown sugar
  • 1/2 cup butter, softened
  • 1 cup shredded zucchini
  • 8 oz can crush pineapple, undrained
  • 2 eggs, slightly beaten
  • 2 cups flour
  • 1 tea. baking soda
  • 1 tea. cinnamon
  • 1/4 tea. salt
  • 1/4 tea. allspice

Preparation

Step 1

Heat oven to 350 degrees. Grease and flour bottom only of 9x5 loaf pan.

In a large bowl, beat brown sugar and butter until light and fluffy. Stir in zucchini, pineapple and eggs. Lightly spoon flour into measuring cup; level off. Add flour, baking soda, cinnamon, salt and allspice to zucchini mixture; blend well.

Spread evenly in prepared pan. Bake at 350 degrees for 60-70 minutes or until toothpick inserted in center comes out clean.

Cool 10 minutes;l remove from pan.
