Macaroni Salad

Ingredients

  • Dressing:
  • 2 c. uncooked elbow macaroni
  • 1 large tomato, seeded and chopped
  • 1 c. frozen peas, thawed
  • 1/2 c. cheddar cheese, shredded
  • 1/2 c. chopped celery
  • 2 hard cooked eggs, chopped
  • 2 green onions, sliced
  • 3/4 c. mayo
  • 1 c. plain yogurt
  • 1 T sugar
  • 1 T mustard
  • 1/8 t. celery seed

Preparation

Step 1

Cook macaroni. Drain and rinse in cold water. In a large bowl, combine macaroni, tomato, peas, cheese, celery, egg and onion. In a small bowl, combine the dressing ingredients. Puor over macaroni mixture and toss to coat. Refrigerate until served.

Add shrimp or chicken if desired.
