Ravioli and Spinach Soup

Ingredients
- 2 (14.5-oz.) cans low sodium beef broth
- 10 ounces fresh or frozen beef ravioli
- Pinch of nutmeg
- 6 ounces fresh spinach
- 3 tablespoons chopped chives
Preparation
Step 1
In a medium saucepan, bring the broth to a boil; add ravioli and nutmeg; reduce heat to a slow boil and cook until ravioli is al dente, about 10 minutes. Just before serving, stir the spinach into the broth. Ladle soup into bowls and garnish with chopped chives.
LC SERVING SUGGESTION: Serve a big green salad on the side.
