Ingredients

  • 1/2 bag hash browns (20 oz)
  • 2 T oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 eggs
  • 2 T milk
  • 3/4 c crumbled bacon (or more)
  • 3/4 c shredded cheddar

Preparation

Step 1

Heat oven to 400
Place foil cupcakes papers in muffing tin and spray
Mix potatoes, oil and seasoning and divide among the cups, press lightly
Bake 20 minutes.
Mix eggs and milk
Stir in bacon and cheese Season with salt and pepper
Firmly press potatoes down with 1/4 c measuring cup and fill with egg mixture
Bake 13-16 minutes until center of egg is clean
Cool 5 minutes
