Cauliflower (Mashed) Potatoes (South Beach Diet)

Ingredients

  • 4 cups cauliflower florets
  • 1oz butter
  • 1 fluid ounce fat free half and half
  • Salt and Pepper

Preparation

Step 1

Steam or microwave the cauliflower until soft. Puree in food processor, adding the butter and the half and half to taste. Season with salt and pepper.
