Chicken with White Bean Chili

Ingredients

  • 2 Tbs butter
  • 1 medium onion, chopped
  • 2 cloves, garlic, minced
  • 1/4 cup all-purpose flour
  • 1 (32-oz) carton chicken broth
  • 2 (15.5-oz) cans great northern beans, rinsed and drained
  • 1 (10-oz) can diced tomatoes with green chiles
  • 3 cups shredded cooked chicken
  • 1 Tbs chili powder
  • 1 Tbs ground cumin

Preparation

Step 1

1. In a large stockpot or dutch oven, melt butter over medium heat. Add onion and garlic; cook, stirring occasionally, for 5 minutes. Add flour, and cook, stirring constantly, for 2 minutes. Stir in broth, beans, and tomatoes, cook for 2 minutes. Stir in chicken, chili powder, and cumin and cook for 15 minutes.
