Pumpkin Mufffins

Ingredients

  • 2 c flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp cloves
  • 1 tsp cinnamon
  • 3/4 tsp nutmeg
  • 2 c sugar
  • 3/4 c butter (I use 1/4 c applesauce and 1 stick butter)
  • 2 eggs
  • 1 lb can pumpkin

Preparation

Step 1

Preheat oven 325°
Cream butter and sugar; add eggs, one at a time. Add pumpkin and dry ingredients. Mix until well blended.
Line cupcake pan with liners. Using ice cream scoop, fill liners to 3/4.

Bake muffins (24) for 20 minutes or until toothpick in center comes out clean.

Bake loaves (2) for 1 hr 15 minutes.
