Ingredients

  • 1-1/2 c. flour
  • 2/3 c. firmly packed brown sugar
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 egg
  • 1-1/2 c. skim milk
  • 2 tbsp. oil
  • 3 c. Bran Flakes
  • 1/3 c. raisins (optional)

Preparation

Step 1

Heat oven to 400F. Mix flour, sugar, baking soda, cinnamon and salt in large bowl. Beat egg in small bowl; stir in milk and oil. Add to flour mixture, stir just until moistened. (Batter will be lumpy) Stir in cereal and raisins. Spoon batter into muffin pan sprayed with no stick cooking spray or use paper cups-filling each cup 2/3 full. Bake 20-25 minutes or until lightly browned. Serve warm
