Breakfast Burrito

Ingredients

  • 1/4 lb. pork sausage
  • 2 Tablespoon chopped onion
  • 2 Tablespoons finely chopped green pepper
  • 2 eggs
  • 2 Tablespoons milk
  • Salt and pepper to taste
  • 1 Tablespoons butter
  • 6 tortillas
  • 1 cup shredded cheese

Preparation

Step 1

Brown pork sausage, onion and green pepper in skillet; drain off fat. In small bowl eggs, milk, salt and pepper. Cook egg mixture in skillet with 1 Tablespoon butter. Spoon 1/6 of meat mixture onto a tortilla and top with 1/6 scrambles egg mixture. Arrange filled tortillas on baking sheet and sprinkle and shredded cheese. Bake at 350 ºF. for 15 minutes.

Note: Place filled tortillas on baking sheet and freeze for several hours. Then place in freezer bag and store up to 3 months. This makes a quick on-the-go breakfast!
