Pork and Rice Casserole

Ingredients

  • 2 Cups Pork Slices
  • 1 Medium Onion
  • 1 Tbs. Soy Sauce
  • 1/2 Cup Celery, chopped
  • 2 1/2 Cups Water
  • 1 Cup Uncooked Rice
  • 2 Tbs. Pimento, chopped
  • 2 Tbs. Almonds, sliced (optional)

Preparation

Step 1

Brown pork and onions in skillet. Save drippings. Combine pork, onions, drippings, soy sauce, celery, rice and water. Pour into oven-proof baking dish. Cover tightly. Bake at 375 degrees for 45 minutes to 1 hour or until pork is done and celery is tender. Fold in pimentos into rice/meat mixture and top with almonds. Serves 4-6.
