Sweet POtatoes - Char-Grilled

  • 2 large sweet potatoes
  • 1/2 stick butter
  • 1 Tbsp. sugar
  • 2 tea. Cajun spice
  • 3 Tbsp. mustard
  • 1 Tbsp. cider vinegar
  • 1 Tbsp. hot sauce
  • 1 Tbsp. brown sugar

Preparation

Step 1

Slice sweet potatoes lengthwise. Simmer covered in a large saute pan in a small base of water, until fork tender.

Pour out any remaining water and add the butter, sugar and Cajun spice. Toss everything well, so that the potatoes are nicely coated.

In a separate bowl, mix the mustard, vinegar, hot sauce and brown sugar.

Heat grill. Place potatoes on the grill at an angle, so they get a nice, charred diamond on the face. Rotate the potatoes to achieve the right marks, then flip and give them a generous brushing of the mustard base.
