Apple Cinnamon Muffins

Great low fat recipe with lots of fiber to use up your fall bounty of apples. Carefully wrap in saran wrap and place in freezer bags to store up to 3 months. Makes a quick, on-the-go-breakfast.

Ingredients

  • 3/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup sugar (I didn't add all of this)
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/3 cup unsweetened applesauce
  • 1 egg lightly beaten
  • 1/3 cup milk
  • 2 apples peeled, cored and chopped ( I shred mine so the children don't notice there is fruit in the muffin:)
  • Topping
  • 1/2 cup sugar
  • 2 2/3 Tablespoons all purpose flour
  • 2 2/3 Tablespoons whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1 1/2 teaspoons cinnamon
  • 1 cup rolled oats

Preparation

Step 1

Preheat oven to 400ºF
Whisk together the flours, sugar, salt, baking powder and cinnamon. In separate bowl mix applesauce, egg and milk and stir into flour mixture. Fold in the apples. Spoon into muffin pans.
Combine topping ingredients and spread over muffin batter.
Bake about 25 minutes (depending on the size of your muffin pans)
