Ingredients

  • 2 carrots peeled
  • 6-7 cloves garlic
  • 1 small onion chopped in quarters
  • 12 oz. salt pork cut into small squares rinsed
  • 3 stalks celery
  • 2 14 oz. cans tomato sauce
  • 1 14 oz. can tomato paste
  • 3 cans water
  • 1 teas. allspice
  • 1 teas. dried basil
  • 1/2 teas. dried parsley
  • 1/2 teas. nutmeg
  • 1/4 teas. oregano
  • 1/2 lb. ground beef
  • 1/2 lb. ground pork
  • 1 stick margarine or butter
  • salt and pepper to taste

Step 1

Place the salt pork in a food processor, and grind it up. Remove from the bowl of the processor and put in a large bowl. Add the carrots, garlic, onion and celery to the processor bowl and grind fine. Add this mixture to the ground salt pork. Mix well

In a large pan, melt the one stick of margarine or butter. Add ground mixture to the pan and sautee for 5-10 minutes. Add ground beef, and ground pork. Cook until meat is no longer pink. Add tomato sauce, tomato paste, and 3 cans water. Add spices and simmer for 1-2 hours.
