Mini Hash Brown Cups

Simply Potatoes are refrigerated & sold near the crescent rolls, butter, or eggs.

Ingredients

  • 1 lb. pork sausage
  • 4 large eggs
  • ½ cup milk
  • 1 (20 oz.) package Simply Potatoes Shredded Hash Browns
  • 3 TB butter, melted
  • ½ tsp pepper
  • 1½ cups shredded cheddar cheese

Preparation

Step 1

Heat oven to 350. Cook sausage in a skillet; drain. Lightly grease two 12-cup muffin tins. In a large bowl, whisk eggs & milk. Add hash browns, butter, pepper, cheese, & sausage. Stir until well combined. Fill muffin tins 2/3 full—a muffin scoop works well. Bake 27-35 minutes, or until a toothpick or knife inserted in the center comes out clean. Refrigerate leftovers. Reheat 3 in the microwave for 1 minute. You might be able to freeze these, but I haven’t tried.
